Ingredients
- 2 cups white rice cooled, cooked
- 15 ounces black beans drained, canned
- ¾ cup corn thawed (see note, frozen
- 2 Roma tomato seeded and diced
- ¼ cup cilantro minced
- 3 tablespoons red onion peeled and minced
- ¼ cup lime juice freshly squeezed
- 2 tablespoons avocado oil
- 1 teaspoon cumin ground
- salt to taste
- black pepper to taste
Instructions
- Add the rice, black beans, corn, tomatoes, cilantro, and red onion to a large mixing bowl. Stir to combine.
- In a small bowl, whisk together the lime juice, avocado oil, and cumin. Pour over the salad and stir to coat.
- Season with salt and pepper to taste and stir once more. Serve immediately or refrigerate until ready to serve.

Notes
- If you prefer to use canned corn, you'll need half of a 15.25-ounce can that's been drained to equal 3/4 cup.
