Fig Caramelized Onion Pizza
Description
This pizza begins with room-temperature dough stretched out on a baking sheet. Onions are sliced thin and cooked slowly in butter until translucent and soft, then finished with balsamic vinegar to deepen their sweetness. Pancetta is cooked separately to render fat without crisping fully. The dough is brushed with olive oil and sprinkled with garlic powder before layering on mozzarella, caramelized onions, pancetta, figs sliced into pieces, additional mozzarella, and crumbled goat cheese.
Baked at 425°F for 15-20 minutes, the crust becomes golden and crisp while the cheeses melt and figs soften slightly. Once removed from the oven, fresh arugula and freshly cracked black pepper are added for brightness and a peppery bite. This pizza presents a refined balance of sweet fruit, savory meat, tangy cheese, and fresh greens, suitable for a distinctive homemade pizza served as an appetizer or main.

- Add the balsamic vinegar and cook for a few more minutes, about 5 minutes.
- Remove the onions from the pan and set aside.
- In the same pan add the diced pancetta and cook just for a few minutes to help cook off some of the fat.
- Brush the stretched out dough with olive oil.
- Sprinkle with garlic powder.
- Top with 3/4 cup mozzarella cheese and then top with caramelized onions, pancetta, figs, remaining mozzarella cheese, and crumbled goat cheese.
- Add to the oven and bake for 15-20 minutes or until the crust is brown and the cheese is melted on the top.
- Remove from the oven and top with arugula and fresh cracked pepper, if desired.
