Fire Roasted Corn Dip
Description
This recipe grills fresh ears of sweet corn, sliced red bell pepper, and onion rings until lightly charred, enhancing their natural sweetness and adding smoky notes. The grilled vegetables are cooled, then cut and chopped before being combined with cooked chorizo, minced garlic, softened cream cheese, milk, shredded spicy pepper cheese such as habanero cheddar or pepper jack, and chopped green onions.
The mixture is baked until bubbling around the edges, producing a creamy dip with a blend of spicy, smoky, and savory flavors. The contrast between the smoky roasted corn and the heat from the pepper cheese and chorizo brings a rich complexity to the dip, perfect for serving warm.
This dip pairs well with tortilla chips or crusty bread and is suitable for parties or casual gatherings.
If a grill is unavailable, vegetables can be seared in a very hot cast iron skillet to achieve similar smokiness before combining with the other ingredients.
Ingredients
- 3-4 ears corn fresh sweet
- 1 onion peeled and sliced into rings, small
- 1 bell pepper small red
- 1 cup chorizo cooked
- 3 cloves garlic minced
- 8 ounces cream cheese softened
- 1/2 cup milk
- 1/2 pound spicy pepper cheese like habanero cheddar or pepperjack, shredded
- 1/4 cup green onion chopped
Instructions
- Preheat the oven to 400 degree F. Preheat grill to high heat. Remove the cornhusks and corn silk, and place the fresh Florida Sweet Corn, onion slices and red bell pepper on the grill. Grill the corn and bell pepper for 8-10 minutes, turning every 2 minutes until all sides are slightly charred. Grill the onion slices for approximately 3 minutes per side.
- When the veggies are cool enough to handle, cut the corn off the cob. Then chop the onions and pepper, removing the pepper seeds.
- In an 8x8-inch baking dish or one-quart soufflé dish, mix all the ingredients together until well combined. Bake for 10-15 minutes until the edges are bubbly. Serve warm with tortilla chips.
Notes
- If you don't have access to a grill, sear the corn, bell pepper, and onion in a very hot cast iron skillet to develop similar charred flavor.
