Firecracker Tofu with Brown Rice

Ingredients
- 1 block extra firm tofu must be firm or extra firm, drained and cut into bite sized cubes
- 2 eggs
- ¼ cup flour
- ½ cup cornstarch possibly more
- ¼ cup vegetable oil or other oil good for frying
- 1 large red pepper seeded and cut into chunks (bite size)
- 1 large orange pepper seeded and cut into chunks (bite size)
- 1 yellow onion cut into chunks (bite size)
- 3 green onions chopped
- 2 bags Success® Whole Grain Brown Rice cooked and kept warm
- 2 8 oz cans of pineapple chunks packed in juice, not syrup, drained and juice set aside
Ingredients for the Sauce
- 2 cloves garlic minced
- 2 teaspoon crushed red pepper flakes more or less depending on heat tolerance
- ⅔ cup sugar I used Stevia
- 1 and ½ cups water
- ½ cup reserved pinapple juice
- 2 TBS Sweet Red Chili Sauce find this in the international aisle
- ½ teaspoon salt
- 4 TBS cold water
- 3 TBS corn starch

Notes
- You could also serve this by itself or with noodles. You can also replace the tofu in this recipe with chicken, however adjust cooking times accordingly.
