Firecracker Tofu with Brown Rice

Ingredients

  • 1 block extra firm tofu must be firm or extra firm, drained and cut into bite sized cubes
  • 2 eggs
  • ¼ cup flour
  • ½ cup cornstarch possibly more
  • ¼ cup vegetable oil or other oil good for frying
  • 1 large red pepper seeded and cut into chunks (bite size)
  • 1 large orange pepper seeded and cut into chunks (bite size)
  • 1 yellow onion cut into chunks (bite size)
  • 3 green onions chopped
  • 2 bags Success® Whole Grain Brown Rice cooked and kept warm
  • 2 8 oz cans of pineapple chunks packed in juice, not syrup, drained and juice set aside

Ingredients for the Sauce

  • 2 cloves garlic minced
  • 2 teaspoon crushed red pepper flakes more or less depending on heat tolerance
  • cup sugar I used Stevia
  • 1 and ½ cups water
  • ½ cup reserved pinapple juice
  • 2 TBS Sweet Red Chili Sauce find this in the international aisle
  • ½ teaspoon salt
  • 4 TBS cold water
  • 3 TBS corn starch

Notes

  • You could also serve this by itself or with noodles. You can also replace the tofu in this recipe with chicken, however adjust cooking times accordingly.
