This Fish Fragrant Tofu recipe uses firm tofu cut into thick strips, coated with cornstarch, and fried until golden brown for a light, crisp exterior. The pork is minced and cooked in the reserved oil to develop richness, then seasoned with doubanjiang and pickled peppers, which yield a savory, mildly spicy base with a characteristic red hue.

Garlic, ginger, and scallion whites are added to the pan, releasing their aromas into the sauce. A mixed stir-fry sauce containing starch, vinegar, soy sauce, water, sugar, and salt is poured in to thicken and balance the flavors. The fried tofu returns to the pan, absorbing the sauce, and the dish is finished with scallion greens for freshness.   • 1 tofu cut into thick strips, firm, regular, box
  • 1/4 cup ground pork
  • 1 spring onions , white part and green part separated
  • 2 garlic finely chopped, cloves
  • 1 tbsp. ginger finely chopped, chopped
  • 1 tbsp. pickled pepper cut into small sections, chopped
  • 1/2 tbsp. doubanjiang

Yu Shiang Stir-fry sauce

  • 1 tbsp. starch , recommend using sweet potato starch
  • 1 tbsp. vinegar
  • 2 tsp. soy sauce light
  • 5 tbsp. water
  • 2 tbsp. sugar
  • 1/4 tsp. salt

Instructions

  1. Cut tofu into thick strips. Either larger or smaller. Then coat with cornstarch one by one.
  2. Prepare a bowl and mix the stir fry sauce together.
  3. Heat oil in pan and fry tofu strips until golden brown. Transfer out.
  4. Keep the oil and then fry minced pork until crisp and browned, slow down the fire, add doubanjiang and pickled peppers. Fry for a while until the oil turn reds.
  5. Add garlic, ginger and scallion in, fry until aromatic. Pour in the mixed sauce. Simmer for 2 minutes.
  6. Return fried tofu strips, mix well. Serve hot!
