Ingredients

  • 2 ounces feta cheese cubed
  • 15 grams sun-dried tomatoes diced
  • ¼ teaspoon basil dried
  • ¼ teaspoon oregano dried
  • ¼ teaspoon garlic powder
  • 3 tablespoons olive oil
  • 2 teaspoons lemon juice
  • 4 cups spring mix leafy greens
  • 1 ounce almonds slivered
  • salt to taste
  • black pepper to taste

Instructions

  1. Combine the cubed feta, sun dried tomatoes, herbs, and 2/3 of the olive oil.
  2. Toss gently to coat the feta in the herbs and oil.
  3. Allow the feta to marinate while you wash and prep your greens and almonds, about five minutes.
  4. In a large bowl, or two small bowls, plate your greens and top with the marinated feta and slivered almonds.
  5. Drizzle the remaining olive oil and lemon juice over the greens then toss to coat. Season with salt and pepper to taste!
