Flammkuchen is a thin-crust French-German pizza topped with crème fraîche, caramelized onions, bacon, and fresh thyme. The dough is rolled very thin, then layered with rich, creamy toppings and baked at high temperature to develop a golden, crisp crust with smoky, savory flavors from bacon and onions.

Description

This version of Flammkuchen begins with a thin pizza dough base rolled out as thin as possible and spread evenly with crème fraîche. Caramelized onions cooked in olive oil add sweetness and depth, while strips of bacon provide a salty, smoky contrast. Fresh thyme sprigs impart herbal notes.

The assembly is baked in a very hot oven (500°F or the highest available) until the crust turns golden and edges crisp, balancing creamy, savory, and sweet elements with a crunchy texture. Cooking the bacon in advance ensures it remains tender without over-crisping during baking.

  • 6 oz crème fraîche
  • 2 onion medium
  • 6 oz Bacon about 5 slices
  • 1 tbsp olive oil
  • 1 prig thyme fresh

Instructions

  1. Cook the bacon. Use a Silpat mat on a baking sheet, in a 350 degrees F. oven for 10 -15 minutes. Bacon should not get overly crispy. Cut the bacon into strips or small pieces.
  2. Chop the onions into small pieces.
  3. Over a medium / hot heat, add the olive oil to a frying pan or skillet. Check to see if the oil is hot. Put a piece of onion into the skillet and see if it sizzles. If so, add the rest of the onion, if not wait another minute for the oil to reach temperature. The oil should be around 360 degrees F. if using a digital thermometer.
  4. On another Silpat mat, using a rolling pin, roll out the pizza dough as thinly as possible.
  5. Spread the crème fraîche over the dough evenly and all the way to the edges.
  6. Evenly distribute the caramelized onions over the crème fraîche.
  7. Sprinkle the bacon pieces over the dough. Bake in a 500 degrees F. oven or the highest oven temperature available for 15 - 20 minutes or until the pizza dough is golden and the edges are getting crispy.
  8. Cut the Flammkuchen into squares and sprinkle fresh thyme leaves evenly over the top. If you want to be completely authentic with this recipe, serve it on a pre warmed wooden board. Enjoy!
