Flautas
Description
The Flautas recipe assembles a filling of shredded beef combined with cheese, salsa, diced chiles, and seasonings like garlic salt and black pepper. This mixture is spooned onto corn tortillas which are then rolled tightly and secured with toothpicks. The rolled tortillas are briefly fried at 375°F in hot oil until the shells turn crisp and golden brown, about 2 minutes, then seasoned immediately with salt. After frying, flautas are kept warm in a low oven until all are cooked.
The frying step creates a crispy, crunchy outer shell that contrasts with the savory, moist filling enriched by the melted cheese and spicy salsa. The combination yields a rich, warm flavor with layers of textures from the crunchy tortilla to the tender beef inside. The dish is served with fresh toppings including shredded lettuce, chopped tomatoes, green salsa, guacamole, and ranch dressing for added freshness and creaminess, suitable as a hearty snack or appetizer.
Alternative cooking methods such as air frying and baking are possible, with specified times and temperatures for crispness and convenience. The filling can be prepared up to 48 hours in advance for faster assembly. Leftovers keep well refrigerated for 3-4 days or can be frozen. These practical steps allow flexibility in preparation and reheating while maintaining the dish’s quality.

Instructions
- Preheat the oven to the warm setting or about 200 degrees F.
- Fill a large saucepan with about ¾ inch oil. Heat over medium heat to 375 degrees F.
- In a medium bowl, combine shredded beef, cheese, salsa, diced chiles, garlic salt, and pepper.
- Working with 4 tortillas at a time, spread a heaping spoonful of filling along the middle of each tortilla. Roll the tortillas tightly around the filling and secure each one with a toothpick.
- Using tongs, hold each flauta in hot oil until firm, then release to continue cooking. Cook until golden brown, about 2 minutes, then remove to a paper towel–lined plate and immediately season with salt.
- Transfer flautas to an alumiunium foil-lined baking sheet and keep warm in the oven while assembling and cooking the remaining tortillas. Serve warm with toppings.
Notes
- You can cook flautas in an air fryer at 400°F for 8-10 minutes, flipping halfway to ensure even crisping.
- For baking, place rolled flautas seam side down, lightly spray with olive oil, and bake at 350°F for 20 minutes.
- Prepare shredded beef filling up to 48 hours ahead and store refrigerated until ready to use.
- Store leftovers in an airtight container in the fridge for 3-4 days or freeze for 1-2 months.
