  • 15 ounces black beans , rinsed and drained
  • 3 egg lightly beaten
  • 1/2 cup honey
  • 2 tablespoons butter , melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1/2 cup cocoa powder unsweetened
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt fine sea salt
  • 1/2 cup chocolate chips semi-sweet

Instructions

  1. Preheat oven to 350 degrees. Line a 9x9 square baking dish with parchment paper and coat with cooking spray.
  2. Place black beans and 1 egg in a blender, blending and scraping the sides until a paste forms.
  3. Add one egg at a time, blending between additions.
  4. Add honey, melted butter, vanilla extract and almond extract, blending well and scraping down the sides.
  5. Add in cocoa powder, baking powder and salt, blending one more time.
  6. Pour batter into prepared baking dish. Top with chocolate chips.
  7. Bake for 30-35 minutes, or until the center passes the toothpick test.
  8. Cool completely before cutting into 9 brownies.
