Ingredients

  • 8 ounces dark chocolate chopped (at least 60% dark, 225g
  • 12 Tablespoons butter cubed, salted, 142g
  • 6 egg separated, large
  • 1 cup granulated sugar 200g
  • 1/3 cup cocoa powder natural, unsweetened, 40g
  • 1/4 teaspoon table salt
  • 1 teaspoon vanilla extract pure

Instructions

  1. Preheat oven to 350°F. Line a 9-inch springform pan with parchment paper.
  2. Melt butter and chocolate in a large heatproof bowl.
  3. Add cocoa powder, salt, vanilla extract, and half of the sugar. Whisk well.
  4. Whisk the egg yolks into the mixture.
  5. Beat egg whites and remaining sugar into a fluffy meringue until stiff peaks form.
  6. Fold 1/3 of the meringue into the chocolate mixture until combined.
  7. Then add the remaining 2/3 of the meringue and gently fold in.
  8. Transfer to the prepared pan and bake for 30 minutes.
