Flourless Chocolate Cookies are dense, rich cookies made without flour, relying on powdered sugar and cocoa powder combined with egg whites and chocolate chips. They bake into soft, slightly chewy rounds with intense chocolate flavor and a tender texture. The absence of flour creates a fudgy interior tempered by the slight crispness from baking.

Description

This recipe uses powdered sugar and unsweetened cocoa powder mixed with cold egg whites to form the base. Salt enhances the chocolate flavor, and semi-sweet chocolate chips add bursts of additional chocolate. Vanilla extract is optional for aroma. The dough is scooped into tablespoon-sized mounds spaced apart to allow spreading while baking.

Baking until set but not overcooked produces cookies that are fragile when warm but develop a tender crumb once cooled. The cookies have a fudge-like texture without any graininess as they contain no flour. Handling them carefully after baking is advised to avoid breaking.

Resting the dough at room temperature briefly before baking can result in shinier cookies. Non-stick spray application to the spatula helps lift the delicate cookies from the baking sheet.

  • 2 1/2 cups powdered sugar
  • 3/4 cup cocoa powder unsweetened
  • 4 egg cold, white
  • 1/4 tsp salt
  • 1 1/2 cups chocolate chips semi-sweet
  • 1 tsp vanilla optional

Instructions

  1. Preheat oven to 350° and line two baking sheets with parchment paper or silicone baking mats, and very lightly grease with cooking spray.
  2. In a large bowl, combine powdered sugar, cocoa powder, and salt. Stir in egg whites (they do not need to be beaten or mixed ahead of time) and vanilla then add chocolate chips. Mix well, but do not over mix.
  3. Scoop tablespoon-size mounds onto prepared baking sheets, leave at least two inches between cookies as they will spread. Bake until set, approximately 10 to 12 minutes. Let cool on baking sheet for about 5 minutes then carefully transfer cookies to a cooling rack with a spatula to cool completely. 

Notes

  • Rest dough at room temperature for 20 minutes before baking to achieve shinier cookies.
  • Cookies are fragile when warm; use a thin, lightly greased spatula to transfer them carefully to cooling racks.
