Flourless Chocolate Cookies are crisp-topped cookies made with cocoa powder, powdered sugar, egg whites, vanilla, and chocolate chips. They develop crackly tops with a rich chocolate flavor and a chewy interior. Resting the dough before baking allows the cookies to set properly, delivering a delicate texture without any flour.

Description

This recipe uses a combination of powdered sugar and unsweetened cocoa powder sifted together, mixed with salt for balance. Whisked egg whites and vanilla extract are folded into the dry ingredients, creating a sticky batter that binds the components without flour. Chocolate chips are added for bursts of melty sweetness throughout.

The dough is formed into tablespoon-sized balls dropped onto greased or parchment-lined cookie sheets with spacing to allow spreading. Letting the dough rest on the sheet for 30 minutes before baking helps the cookies form distinctive crackled tops while maintaining a tender interior. Baking at 350°F for 7-9 minutes finishes the cookies with a slightly crisp exterior and soft middle.

Ingredients

  • cups powdered sugar
  • ¾ cup unsweetened cocoa powder
  • ¼ teaspoon salt
  • 3 large egg discard the yolks, whites
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

Instructions

  1. Lightly grease cookie sheets with nonstick cooking spray or line sheets with parchment and then lightly grease. (Greasing is necessary even with parchment paper so that the cookies don't stick). 
  2. In a large bowl sift the powdered sugar, cocoa powder, and salt. 
  3. In a small bowl whisk the egg whites.
  4. Stir the egg whites and vanilla extract into the dry ingredients. It will get sticky like glue.
  5. Stir in the chocolate chips.
  6. Drop the batter into tablespoon-sized balls on the greased cookie sheet at least 2 inches apart. I like to use a cookie scoop for this.
  7. Allow to sit on the baking sheet for 30 minutes. 
  8. Preheat the oven to 350°F as the cookies are resting.
  9. Bake in the preheated oven for 7-9 minutes or until the tops look crackly. 

Notes

  • Cookies keep fresh in an airtight container for 4 to 5 days.
  • For longer storage, freeze in a container separated by parchment paper layers for 1 to 2 months.
