Flourless Fudgey Peanut Butter Brownies
Description
This flourless brownie recipe begins by melting butter, chocolate chips, and peanut butter to form a smooth base. This is combined with eggs, sugar, cocoa powder, vanilla, and salt to create a thick batter that bakes into fudgy brownies with no flour. Baking in an 8x8 pan ensures even thickness and a consistent texture.
The result is a firm yet moist brownie with a strong peanut butter and chocolate flavor profile. After cooling, a drizzle made from melted chocolate chips and peanut butter is spread on top and chilled briefly in the fridge to set the topping, adding a creamy finish.
These brownies can be stored in an airtight container at room temperature for up to five days, maintaining their fudgy texture and flavor.
Ingredients
- ½ cup butter
- 2 cups chocolate chips semi-sweet
- ½ cup peanut butter creamy
- 4 egg
- ½ cup sugar
- ½ cup cocoa powder unsweetened
- 1 tablespoon vanilla
- ½ teaspoon salt
Drizzle
- ¼ cups chocolate chips semi-sweet
- ¼ cup peanut butter
Instructions
- Preheat oven to 350 degrees. Line an 8x8 inch pan with foil or parchment and grease with nonstick spray.
- Melt the butter, 2 cups chocolate chips, and 1/2 cup peanut butter in a microwave safe bowl at 1/2 power for 2 minutes. Stir until smooth (return to microwave for another 20 seconds at a time as needed until completely melted and smooth).
- Add chocolate mixture to a large mixing bowl. Add eggs, sugar, cocoa powder, vanilla, and salt and mix until smooth. Transfer mixture to prepared pan and bake for 30-40 minutes until set and an inserted toothpick comes out mostly clean. Allow to cool completely.
- Once brownies have cooled, melt remaining 1/4 cup chocolate chips and 1/4 cup peanut butter in a microwave safe bowl at 1/2 power for about 1 minute or until you can stir it smooth. Drizzle over cooled brownies. Place in the fridge for about 10 minutes for the drizzle to set. Cut into bars and serve.
Notes
- Keep brownies in an airtight container for up to five days to preserve freshness.
- Use an 8x8 inch pan lined and greased for even baking and easy removal.
