Flourless Gluten-Free Chocolate Cookies

These flourless gluten-free chocolate cookies rely on powdered sugar, cocoa powder, and whipped egg whites to create a dense, crackly-top cookie with rich chocolate flavor. The addition of chopped dark chocolate adds texture and pockets of melted sweetness. They bake until the tops are set but soft inside, providing a chewy yet tender texture without any flour.

Description

The Flourless Gluten-Free Chocolate Cookies combine powdered sugar and cocoa powder whisked with egg whites, vanilla, and salt to form a thick batter. The inclusion of chopped dark chocolate adds bursts of chocolate richness and texture. Baked at 350 degrees until the tops develop a crackled surface, these cookies offer a chewy and moist center while maintaining a delicate crispness outside.

The absence of flour means the texture is dense but not heavy, relying on the structure created by the egg whites. This recipe is suitable for those avoiding gluten or flour, with a straightforward mixing method yielding consistent results.

These cookies are best served once fully cooled on the baking sheet, retaining their tender crumb and crackled top. They can accompany coffee or be enjoyed as a chocolate treat on their own.
