Flourless Peanut Butter Chocolate Chip Cookies
Description
This recipe for Flourless Peanut Butter Chocolate Chip Cookies excludes traditional flour, relying on peanut butter as the primary binder. Mixing peanut butter, granulated and brown sugars, egg, and baking soda yields a dough that is rich and sticky. Semi-sweet or milk chocolate chips add sweetness and texture throughout the cookies.
Portions of dough are dropped onto lined baking sheets, spaced appropriately, and slightly flattened before baking at 350°F for 10-12 minutes. The result is a cookie with chewy, tender crumb and melting pockets of chocolate. Cooling on the baking sheet briefly before transferring helps them hold together since they are delicate.
These cookies are ideal for peanut butter lovers or anyone preferring flourless recipes. Storing in a single layer in an airtight container preserves their texture and prevents breakage. They offer a simple way to enjoy a flavored treat without the structure or density of wheat flour.
Ingredients
- 1 cup (240g) peanut butter not natural, creamy
- 1/2 cup (100g) granulated sugar
- 1/3 cup (80g) light brown sugar packed
- 1 egg large
- 1/2 tsp baking soda
- 1 cup (170g) semi-sweet chocolate chips I like to use a blend, or milk chocolate chips
Instructions
- Preheat oven to 350 degrees. Line 2 baking sheets with a silicone baking mat or parchment paper.
- In a mixing bowl, using a large spoon, mix together peanut butter, granulated sugar, light brown sugar, egg and baking soda until well blended.
- Stir in chocolate chips.
- Drop dough by the rounded tablespoonfuls (about 1 1/2 Tbsp each) onto prepared baking sheets, spacing cookies 2-inches apart.
- Flatten each slightly. Bake one sheet at a time in preheated oven 10 - 12 minutes.
- Cool on baking sheet 5 minutes then transfer to a wire rack to cool completely.
- Store cookies in a single layer in an airtight container, they are somewhat delicate so don't just toss them into a bag or they can break apart.
