Instructions

  1. First, preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix the cookie dough: In a medium bowl, combine the peanut butter, coconut sugar, and egg. Stir until smooth and fully combined.
  3. Shape the cookies: Scoop out about 1 tablespoon of dough and roll it into a ball. Place the balls onto the prepared baking sheet, about 2 inches apart. Flatten each ball slightly with a fork, making a criss-cross pattern.
  4. Bake: Bake for 8-10 minutes, or until the edges are slightly golden. Be careful not to overbake—these cookies will continue to firm up as they cool.
  5. Cool: Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
  6. Melt the dark chocolate: In a small microwave-safe bowl, melt the dark chocolate chips in 20-30 second intervals, stirring in between, until smooth.
  7. Dip the cookies: Once the cookies are cool, dip half of each cookie into the melted dark chocolate. Place the dipped cookies on a parchment-lined tray and allow the chocolate to set. If desired, sprinkle with flaky sea salt.
  8. Enjoy! Serve once the chocolate has hardened, or store in an airtight container.
