Flourless Peanut Butter Cookies

Five ingredients needed to make these flourless peanut butter cookies. Keep them simple with the traditional criss-cross pattern or add chocolate!

Ingredients
- 1 cup peanut butter creamy
- 3/4 cup brown sugar*
- 1/2 teaspoon baking soda
- 1 egg large
- 1 teaspoon vanilla extract
- chocolate stars or wafers optional
- 1/4 cup granulated sugar for rolling cookies in before baking optional
Instructions
- Preheat the oven to 350 degrees. Line a baking sheet with parchment paper and set aside.
- In a medium bowl beat with a mixer the peanut butter, sugar and baking soda until the ingredients are incorporated. Blend in the egg and vanilla.
- Scoop small balls of the dough and roll into granulated sugar. Place on prepared cookie sheet and gently press chocolate in the middle of each cookie or lightly press with a fork and form a crisscross pattern. Bake for 8-10 minutes.
Notes
- I forgot to preheat my oven so put the dough in the freezer while waiting for the oven to get to the correct temperature. This is not reflected in the directions.
- Low sugar option! Use a sugar-free alternative like monk fruit or erythritol, brown sugar versions.
