Description
These cookies rely on whipped egg whites beaten with sugar to create a fluffy, meringue-like base. Folding in mini chocolate chips and chopped pecans adds texture and flavor contrast. Instead of a conventional bake time, the cookies are baked briefly before the oven is turned off, and then they remain inside for several hours to slowly dry and crisp.

Store the cookies in an airtight container with layers separated by waxed paper to maintain crispness. They can also be frozen for up to 3 months, though moisture pickup during thawing can be reversed by a short low-temperature oven re-dry.
Ingredients
- 2 egg white
- Pinch salt
- ¾ cup sugar
- 1 teaspoon vanilla
- 6 ounces mini chocolate chips
- 1 cup pecans chopped
Instructions
- Preheat oven to 350 degrees.
- Place the egg whites and a pinch of salt in a medium mixing bowl. Beat at a medium low speed until the egg whites are frothy.
- Increase the mixer speed to high and slowly add the sugar, beating until the egg whites form stiff peaks.
- Add the vanilla extract, chocolate chips, and pecans. Gently fold the ingredients to avoid deflating the meringue.
- Drop the meringue mixture by teaspoons, spacing about an inch apart, on foil covered baking sheets.
- Place in the preheated oven and immediately turn the oven off.
- Leave the cookies in the oven for at least 8 hours, preferably overnight. Do not open the oven door.
- Remove the baking sheet from the oven.

- Store these cookies in an airtight container with waxed paper layers to keep them crisp for up to two weeks.
- Cookies can be frozen in a sealed container with waxed paper between layers for up to three months.
- If thawed cookies become sticky, dry them in a 200°F oven for about ten minutes to restore crispness.
