Four Herb Roasted Potatoes
Description
This recipe begins by simmering Jersey royal potatoes to partially cook them, allowing the inside to soften while retaining structure. Tossing with olive oil, salt, pepper, garlic granules, and half of a fresh herb blend gives balanced seasoning. The potatoes roast at a high temperature until their skins crisp and develop slight color without becoming dry.
After roasting, a final sprinkle of the remaining fresh herbs adds brightness and a fresh herbal aroma. Using a mix of parsley, coriander, basil, and chives provides complexity without overpowering the potatoes. Garlic granules contribute gentle garlicky notes while avoiding moisture accumulation from raw garlic.
These roasted potatoes serve as a versatile side, well paired with meats or vegetables and suited for casual or more elegant meals. Substituting chopped baking potatoes remains possible, and fresh garlic may replace granules if preferred though the texture will differ.
Ingredients
- 750 g potatoes halved if quite big; whole if not, Jersey royal variety
- 2 tablespoon olive oil
- 1 pinch sea salt
- 1 pinch black pepper
- 1 tablespoon garlic granules
- 1 handful mixed fresh herbs (we used parsley, coriander, basil and chives)
Instructions
- Preheat your oven to 200°C/180°C(fan)/400°F/Gas 6.
- Add 750 g Jersey royal potatoes to a pan of boiling water and simmer for 10 minutes.
- Transfer the potatoes to a baking tray and add 2 tablespoon Olive oil, 1 pinch Sea salt and ground black pepper, 1 tablespoon Garlic granules and half 1 handful Mixed fresh herbs and mix well.
- Put them in the oven for 35-40 minutes until the skin has gone a bit crispy.
- Transfer to a bowl and sprinkle with half 1 handful Mixed fresh herbs before serving.
Notes
- Any fresh herbs that need using are suitable; you don’t have to stick to exactly parsley, coriander, basil, and chives.
- Using garlic granules adds flavor without extra moisture, but fresh garlic can substitute if preferred.
- Small new potatoes produce crisp skin, though chopped baking potatoes also work for this roasting method.
