Freezer Friendly Double Chocolate Banana Muffins

Ingredients

  • 1 1/2 cups flour
  • 3 Bananas (smashed)
  • 1 egg
  • 3/4 cup sugar
  • 1/3 cup cocoa
  • 1/4 tsp baking powder
  • 1/3 cup coconut or vegetable oil
  • 1/2 tsp salt
  • 2/3 cup mini chocolate chips

Instructions

  1. Mix flour, salt, cocoa, and baking powder in a small bowl. 
  2. In a separate bowl, beat together bananas, sugar, egg and oil. 
  3. Add in dry mixture, and whisk thoroughly until evenly combined. 
  4. Fold in chocolate chips, then pour into a lined muffin tin. 
  5. Bake at 350 for 25 minutes. 

Notes

  • To Freeze: Place muffins in a freezer ziploc bag and seal.
