French fries

French fries (frites) are potato sticks that are fried in vegetable oil or animal fat, and that originate from Belgium.

Ingredients

Servings
  • 2 lb potato bintje, starchy
  • 2 quarts cooking oil or 6 lb of blanc de boeuf, for frying
  • salt

Equipment

  • Peeler
  • Cutting board
  • Deep fryer

Instructions

  1. Peel the potatoes using a peeler and wash them under running water.
  2. On a cutting board, cut the potatoes into sticks approximately ½ inch (1 cm) thick, depending on taste.
  3. Dip the potato sticks in a large quantity of room temperature water and let them soak for 30 minutes.
  4. Then drain them and dry them thoroughly in a thick cloth.

First frying

  1. Heat the beef fat or oil in a deep fryer at 300 F (150°C).
  2. Place the fries in the basket and immerse them in the frying fat.
  3. Leave to fry for 5 minutes.
  4. Remove the frying basket and drain the fries.
  5. Transfer the fries to paper towels and let them cool for 30 minutes.

Second cooking

  1. Bring the fryer temperature to 350 F (180°C).
  2. Place the fries back in the basket and immerse them in the frying.
  3. Fry for 4 to 5 minutes or until fries are golden brown.
  4. Remove the basket, drain, shaking well.
  5. Place the fries in a dish lined with absorbent paper
  6. Season generously with salt and serve hot.
