Ingredients
Onions
- 4 tbsp butter
- 1 tbsp olive oil
- 3 lbs yellow onions sliced
- 1 tsp kosher salt
- 1/2 cup dry white wine
- 1 tsp Worcestershire sauce
- 1 beef bouillon cube crushed
- 1/2 tsp dried thyme
- 1/4 tsp black pepper
Mac and Cheese
- 1 lb elbow macaroni
- 1 tbsp olive oil
- 8 tbsp butter
- 4 tbsp all-purpose flour
- 3 cups milk
- 1 tbsp hot sauce
- 1 tbsp Dijon mustard
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 8 oz cream cheese cubed (room temp)
- 2 cups mozzarella cheese shredded (or Monterey Jack)
- 2 cups cheddar cheese shredded
Instructions
Onions
- In a heavy bottom soup pot or Dutch oven over medium heat add the butter and oil to melt.
- Add the sliced onions, salt and stir. Cover with lid and cook for 15 minutes. Remove lid and turn heat to low. Cook, stirring often, another 15 minutes until onions are a dark golden brown.
- Add the wine, Worcestershire Sauce, beef bouillon cube, thyme and pepper. Stir and cook another 5 minutes. Set aside.
Mac and Cheese
- Preheat oven to 350°F. Grease a 9x13” casserole dish or 12" cast iron pan with cooking spray. Set aside.
- In a large stock pot boil pasta in heavily salted water per package directions. Drain and add to prepared pan. Toss with 1 tablespoon of olive oil to prevent sticking. Set aside.
- In a large skillet add the butter and melt over medium heat. Whisk in the flour and cook for a minute. Add the milk and whisk to mix thoroughly. Whisk in the mustard, hot sauce, salt and pepper. Lower the heat to simmer and cook for 4 minutes, the sauce will thicken.
- Add the cream cheese and whisk to melt in the sauce. Add the mozzarella and cheddar cheeses, whisking to melt and incorporate. Sauce should be smooth. Pour over the cooked pasta and stir to mix in completely.
- Add the onions to the mac and cheese, stirring through to mix evenly. Bake for 20 minutes uncovered. This should be enough for 8 large servings or 10 as a side.
