French Onion Pasta

French Onion Pasta has all of the delicious flavors of the classic soup in pasta form! Caramelized onions, garlic, mushrooms, and thyme are combined with beef broth, pasta, Worcestershire sauce and parmesan cheese to create an incredible dish. Everything is made in one pot for a quick and easy weeknight meal!

  • 2 yellow onion large
  • ¼ cup butter
  • 3 teaspoons garlic minced
  • 8 ounces mushroom sliced
  • 1 tablespoon thyme plus more for serving, fresh
  • ¼ cup all-purpose flour
  • ½ cup white wine
  • 5 cups beef broth
  • 16 ounces rigatoni pasta uncooked
  • 1 tablespoon Worcestershire sauce
  • ½ cup Parmesan Cheese plus more for garnish, grated
  • salt to taste
  • black pepper to taste

Instructions

  1. Cut 2 large yellow onions in half and thinly slice them. Heat ¼ cup butter in a large pot over medium-high heat and add the sliced onions.
  2. Cook the onions, stirring occasionally, until the onions are caramelized, about 20-30 minutes.
  3. Once the onions are caramelized, add 3 teaspoons minced garlic, 8 ounces mushrooms, and 1 tablespoon fresh thyme,. Sauté until the mushrooms are soft, about 3-4 minutes.
  4. Whisk in ¼ cup all-purpose flour, creating a thick paste. Slowly whisk in the ½ cup white winehe flour paste should be incorporated smoothly.
  5. Add 5 cups beef broth, 16 ounces rigatoni, 1 tablespoon Worcestershire sauce, and salt and pepper. Bring to a low boil and cook until the pasta is al dente, or to the desired texture.
  6. Remove the pot from heat and stir in ½ cup grated parmesan cheese,. Serve fresh with additional parmesan cheese.
