French Toast Casserole

A sweet crunchy streusel topping covers the cubed chunks of this cinnamon French toast casserole. Serve with warm maple syrup and a side of fresh fruit and breakfast is served!

For the casserole:

  • 16 ounces day old french bread (or challah or sourdough)
  • 10 large eggs
  • 2 cups milk
  • 1/3 cup half and half
  • 2 tablespoons brown sugar
  • 1 tablespoon vanilla extract
  • 2 teaspoons cinnamon

For the topping:

  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 1/3 cup flour
  • 1 teaspoon cinnamon
  • 3 tablespoons cold butter

Instructions

  1. Preheat the oven to 350º Fahrenheit. Spray a 9x13 baking pan with cooking spray.
  2. Slice the bread into 1" cubes. Place the bread evenly in the prepared pan.
  3. In a large bowl, whisk together the eggs, milk, half and half, sugar, vanilla and cinnamon. Whisk until the eggs are broken up and well combined with the other ingredients.
  4. Pour the egg mixture evenly over the bread.
  5. Place the topping ingredients in a medium bowl. Use a pastry cutter or two knives to cut the butter into the topping. Do this until the mixture resembles coarse crumbs.
  6. Sprinkle the streusel over the casserole.
  7. Cover the baking pan with foil and bake for 20 minutes covered. Then uncover and bake an additional 25 minutes or until the center is set.
  8. Drizzle with maple syrup or sprinkle with powdered sugar.
