Fresh Blueberry Crisp
Description
Fresh Blueberry Crisp brings together fresh blueberries mixed with sugar, cinnamon, and flour to create a tender fruit filling that thickens as it bakes. A base layer of softened butter in the baking dish helps prevent sticking and adds richness.
The crisp topping made of flour, light brown sugar, salt, and melted butter is mixed into coarse crumbs and sprinkled evenly over the berries before baking. As it bakes at 350ºF for 40-45 minutes, the fruit filling bubbles and the topping turns golden and crisp.

Ingredients
Filling:
- 1 tablespoon butter softened, unsalted
- 12 oz blueberries fresh
- 1/3 cup granulated sugar
- 1 tablespoon all-purpose flour
- 1/2 teaspoon cinnamon
Crisp:
- 3/4 cup all-purpose flour
- 1/4 cup light brown sugar
- 1/2 teaspoon salt
- 1/4 cup butter melted, unsalted
- 1 tablespoon granulated sugar
Instructions
- Preheat the oven to 350ºF. Spread the 1 tablespoon of softened butter on the bottom of a 1 quart baking dish. (I used a 9-inch deep dish pie dish and it worked perfectly.)
- Combine the blueberries, sugar, flour and cinnamon in a large bowl. Pour the berry mixture into the prepared pan.
- In the same bowl, combine the flour, brown sugar and salt. Add the melted butter and use your fingers to mix the mixture so that it resembles coarse sand. Sprinkle the mixture evenly over the top of the berries. Sprinkle the tablespoon of sugar over the top.
- Bake in the preheated oven for 40-45 minutes until the filling is bubbling and the crisp topping is browned.
Notes
- Use a 9-inch deep dish pie dish or similar 1-quart baking dish for best results.
- Bake until the filling is bubbling and the topping is golden brown, about 40-45 minutes.
- The topping can be mixed by hand until it resembles coarse sand for texture.
- Serving the crisp warm enhances the contrast between crunchy topping and soft fruit.
