Fresh Cherry Sauce
Description
The Fresh Cherry Sauce brings out the natural sweetness and tartness of ripe cherries, cooked until they soften and release their juices. The addition of sugar balances the acidity, while the lemon juice brightens the flavor and the cornstarch mixture gives the sauce its thick, glossy consistency. A hint of almond or vanilla extract adds subtle background notes that enhance the fruit without overpowering it.

If you find the sauce too thin after cooling, gently reheating it with a little more dissolved cornstarch will help achieve the desired thickness.
Ingredients
- 2 lbs Cherry fresh, pitted
- 1/2 cup water
- 1/2 cup sugar more if you like it sweeter
- 2 tsp cornstarch
- 2 tsp lemon juice
- 1 tsp almond extract optional, or vanilla extract
Instructions
- Put the cherries, water, and sugar in a heavy saucepan. Bring to a full boil over medium high heat, stirring to dissolve the sugar. Cook for a few minutes while the cherries start to release their juices.
- Stir the cornstarch together with the lemon juice and add to the pan. Continue to stir and cook until the sauce has thickened and is glossy, this will only take a minute or two. Remove from the heat and stir in the extract.
- Let the sauce cool, then put into jars or an airtight container and refrigerate until needed. You can use it cold, room temperature, or warmed up.
- Makes 1 1/2 quarts.
Notes
- If the sauce is not thick enough after cooling, gently reheat it with additional dissolved cornstarch until desired consistency is reached.
- The sauce can be stored in an airtight container in the refrigerator and used cold, at room temperature, or warmed.
- Use fresh, ripe cherries and ensure they are pitted for best flavor and texture.
