Fresh Peach Ice Cream
Description
This ice cream recipe starts by macerating chopped, pitted peaches with a portion of sugar to draw out juices and soften the fruit. Half of the peaches are pureed while the rest remain chopped for texture. The peach juice from maceration enhances the ice cream base's flavor.
The base is made by mixing sugar and whole milk until dissolved, then adding heavy cream and vanilla extract to create a rich, creamy mixture. The pureed peaches and peach juice mix in before pouring the base into a pre-frozen ice cream maker bowl for churning.
Chopped peaches are incorporated near the end of churning to distribute fruit pieces throughout the soft-serve ice cream. The ice cream can be eaten immediately as soft serve or transferred to a container and frozen for several hours for a denser scoopable texture. Using fresh peaches with skin on or off is acceptable depending on preference, and frozen thawed peaches can be used as a substitute when fresh are not in season.
Ingredients
- 6 peaches pitted and chopped (see note)
- 1 ½ cups granulated sugar divided
- 1 ½ cups milk whole
- 2 ¾ cups heavy cream
- 1 ½ teaspoon vanilla extract
Instructions
- Place the ice cream maker bowl in the freeze 6-24 hours before making this recipe.
- Add the peaches and 1/2 cup of sugar in a medium mixing bowl and gently toss to coat. Allow to sit for 2 hours so the peaches can macerate.
- Pour the juices in the bowl of peaches into a small bowl and set that aside. Then purée half of the peaches in a food processor or blender.
- In a large mixing bowl, whisk the sugar and milk together until the sugar is dissolved.
- Add in the heavy cream, vanilla extract, peach juice, and peach puree.
- Put the frozen ice cream maker bowl into the machine. Pour the ice cream base into the bowl and proceed as your ice cream maker directs.
- When there is about 5 minutes left before you need to stop the ice cream maker, add in the chopped peaches. Once the time is up, you will have soft serve ice cream.
- If you want your ice cream to have the "standard" consistency, transfer it to a freezer-safe container. Allow the ice cream to freeze for 2-4 hours to your desired consistency.
Notes
- Frozen peaches can replace fresh ones when out of season; thaw before using and puree all slices, reserving some chopped for mix-in.
- Peach skin may be left on or removed based on personal preference without affecting the recipe outcome.
