Fresh Peach Pie
Description
To prepare Fresh Peach Pie, peeled and chopped peaches are combined with sugar and lemon juice and rested to draw out juice. The extracted juice is thickened by cooking it with cornstarch, then enriched with butter, almond extract, and a pinch of salt. The peaches are placed into a baked pie shell and topped with the thickened sauce before chilling to set.
The dessert delivers a soft, juicy filling with a smooth glaze that accentuates the peaches’ flavor without overwhelming it. Serving with whipped cream adds a light, creamy contrast to the bright and tender fruit.
This pie can be made ahead and stored in the refrigerator up to a day. It is also suitable for freezing when tightly wrapped; thaw completely before serving. These options provide practical flexibility for preparing ahead of time or enjoying later.
Ingredients
- 6 cups peach peeled and chopped (about 9 peaches, fresh
- 2 Tablespoons lemon juice
- 1/2 cup granulated sugar
- 2 Tablespoons cornstarch
- 1 Tablespoon butter
- salt dash
- 1/2 teaspoon almond extract
- 1 inch pie shell baked
- Whipped Cream , for topping
Instructions
- Add peaches to a bowl then sprinkle with sugar and lemon juice. Stir well to combine, then allow to rest for 30 minutes to an hour, stirring once or twice.
- Drain peach juice into a measuring cup to get 1 cup of juice (you can drink any additional juice, or save it for another recipe like my steak marinade).
- Pour juice into a saucepan then stir in cornstarch. Cook on medium heat for a few minutes, until thickened.
- Remove from heat then stir in the butter, salt and almond extract.
- Pour peaches into a baked 9'' pie shell and pour the thickened sauce on top. Place a piece of plastic wrap directly on top then chill for at least one hour before serving.
- Serve with whipped cream on top, if desired.
Notes
- This pie can be made up to 1 day ahead and stored refrigerated until serving.
- For freezing, wrap the cooled pie tightly with plastic wrap and foil, and freeze for 2–3 months; thaw fully before serving.
