Ingredients
- 7 peach peeled (or not!) and sliced, ripe
- 1 Tbsp sugar
- 2 Tbsp lemon juice 1/2 lemon, fresh
biscuits
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1 tbsp sugar plus more for sprinkling
- ½ tsp. salt
- 2/3 cup buttermilk very cold
- 1 egg large
- 4 ounces butter melted and cooled (4 ounces = 1/2 cup / 1 stick, unsalted
whipped cream
- 1 cup cold cream
- 2 Tbsp confectioners sugar sifted
- 1 tsp vanilla extract
Instructions
- Set oven to 425°F.
- In a large bowl, toss the sliced peaches with sugar and lemon and set aside.
- Mix the dry ingredients in a separate bowl and whisk to combine.
- In a small bowl, whisk the wet ingredients together. Pour the cold liquid into the flour and mix until just blended---don't over work it. I like to use two dinner forks.
- Drop 1/3 cup sized mounds of dough onto a parchment lined baking sheet. Space them 2" apart. This dough will make 5 or 6 biscuits.
- Sprinkle a little sugar over the top and bake for about 12-15 minutes. They should be light golden, and you don't want to over bake them. Cool on a rack.
- Whip the cold cream with the sugar and vanilla until soft peaks form.
- To serve the shortcakes, split a biscuit in half and top with peaches and a good dollop of whipped cream. Don't forget to spoon a little of the peach juice over the biscuits, too!
Notes
- Other fruits such as strawberries, apricots, or plums work well in place of peaches.
- Add liquor like whiskey or Amaretto to peaches or whipped cream for an adult version.
