Fresh Squeezed Citrus Popsicles

Fresh Squeezed Citrus Popsicles have to be the ultimate summer treat, and you can indulge without an ounce of guilt!

Ingredients

Servings
  • 3 cups fresh citrus juice your choice (lemon, orange, grapefruit, lime, etc.)

For the simple syrup:

  • 1 cup water
  • 1 cup sugar

Instructions

  1. Juice your fruit. You can either strain out the pulp, or leave it in, but be sure to remove any seeds.   If the juice is sweet, no need for added sweetener, just pour into the mold.  Leave a little room at the top for expansion.
  2. If the juice is sour, add a little simple syrup.  Taste as you go, and then fill your mold.
  3. Fit the top on your mold and insert popsicle sticks.  Freeze until solid, abou 8 hours, or overnight.
  4. To un-mold your pops, first remove the lid.  Fill your sink with hot water, and briefly dip the mold into the water, just up to, but not past, the top lip.
  5. Slide each pop out and serve immediately or wrap in plastic or waxed paper and put back in the freezer.

For the simple syrup:

  1. Put the sugar and water in a small sauce pan and bring to a simmer.  Simmer for 3-4 minutes and then turn off the heat and let it cool.  Store any leftover simple syrup in an airtight container in the refrigerator.
