Fresh Strawberry Cobbler

Fresh Strawberry Cobbler features a mix of whole and sliced strawberries tossed with sugar and cornstarch, topped with a tender biscuit-like dough made from flour, butter, and a hint of cinnamon. The topping bakes to a golden crust, providing a soft, tender texture contrast to the juicy and slightly thickened berries underneath. Served warm with vanilla ice cream, it offers a balance of sweet and fruity flavors enhanced by the cinnamon in the dough, making it a satisfying dessert when fresh strawberries are in season.

Description

Fresh Strawberry Cobbler combines sweet strawberries tossed lightly with sugar and cornstarch, allowing the berries to release their juices and thicken during baking. The topping is a biscuit-style dough made by cutting cold butter into flour mixed with sugar, baking powder, cinnamon, and salt, then incorporating egg, milk, and vanilla to form a soft dough. Spoonfuls of this dough are scattered over the berries, baking to a golden brown crust with a tender interior. The cinnamon in the dough adds a subtle warmth that complements the sweetness of the strawberries.

The dessert is baked until the topping is golden and cooked through, providing a comforting texture contrast between the juicy, slightly thickened strawberries and the soft, cakey topping. It is traditionally served warm, often accompanied by vanilla ice cream, which melts slightly over the cobbler, adding creaminess to each bite.

Adjusting the sugar amount with the strawberries depends on their sweetness — less sugar is needed for very sweet berries and more for less ripe fruit. Testing the underside of the topping ensures it’s fully baked through without sogginess. This cobbler is a good way to use fresh strawberries and enjoys variations depending on how the topping dough is shaped on the fruit.

Ingredients

Servings
  • 3 cups strawberry I like a mix! some small whole, some sliced in half, chopped or halved
  • 1/3 cup sugar
  • 1 tablespoon cornstarch

topping

  • 1 1/3 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon cinnamon
  • pinch salt
  • 6 tablespoons butter cold and cut into pieces, unsalted
  • 1 egg lightly beaten
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • vanilla ice cream for serving

Instructions

  1. Preheat the oven to 350 degrees F. Spray a baking dish (9×13 or 9-inch round works too) with nonstick spray. Add the strawberries and sprinkle with the sugar and cornstarch. Toss gently, just until the berries are coated.
  2. To make the cobbler topping, whisk together the flour, sugar, baking powder, cinnamon and salt. Using a fork, pastry blender or your fingers, add the butter and incorporate it into the flour until small pieces and crumbs remain. Beat together the egg, milk and vanilla extract. Add it into the dry ingredients and stir until a dough forms. Add spoonfuls of the dough all over the strawberries.
  3. Bake the cobbler for 35 to 45 minutes, until it’s golden and cooked through. I sometimes pull it out and check the underside of the cobbler, just to make sure the topping it cooked through.
  4. Serve immediately with vanilla ice cream.

Notes

  • Adjust sugar in the berry mixture based on the sweetness of your strawberries for best flavor balance.
  • Check the underside of the cobbler topping during baking to ensure the dough is fully cooked through.
  • Serve the cobbler warm, ideally with vanilla ice cream to complement the fruity filling and golden topping.
