Fricasé de Pollo

Ingredients

  • 4 chicken thighs
  • 1 lb potato peeled and diced, small
  • 6 cloves garlic , crushed
  • 1 onion , diced
  • 2 small red bell pepper diced
  • 1 small yellow bell pepper (or green), diced
  • 2 cups tomato sauce (passata)
  • 1 cup bitter orange juice (or half lime, half orange)
  • ½ cup white wine dry
  • cup extra virgin olive oil
  • 1 tablespoon salt
  • ½ tablespoon black pepper freshly ground
  • 1 teaspoon cumin ground
  • 1 teaspoon garlic powder
  • 1 bay leaf
  • 2 packs Sazón GOYA® seasoning with annatto
  • 6 oz green olives (with or without pimento stuffing)
  • 1 cup water boiling

Equipment

Instructions

  1. In a large bowl, combine the chicken with the bitter orange juice, garlic, onion and peppers.
  2. Cover with plastic wrap and marinate in the refrigerator for 2 hours.
  3. Remove the chicken from the marinade with a skimmer and dry it lightly with paper towels. Reserve the marinade.
  4. In a large Dutch oven, heat the olive oil over medium heat and brown the chicken on all sides until golden brown.
  5. Add all of the reserved marinade, without forgetting the garlic, onion and peppers.
  6. Add the tomato coulis, wine, olives and all the dry seasonings. Cook for 5 minutes, stirring frequently.
  7. Add the potatoes and cover with the boiling water.
  8. Cook for 30 to 45 minutes or until the chicken is cooked through and the potatoes are tender.
