  • 1 big or 2 medium red bell pepper, cut into 5 cm – 2 inch pieces
  • 2 potato or 3 medium, chopped into 3 cm - 1 ¼ inch cubes, big
  • 1 onion sliced, medium
  • 3 tbsp extra virgin olive oil
  • salt to taste

Notes

  • You can also cover the vegetables with a lid while frying them, this will shorten a bit the cooking time.
