Fried Garlic Ribs

Fried Garlic Ribs are pig ribs marinated with garlic, ginger, soy and oyster sauces, salt, and white pepper, then coated in starch and deep-fried twice for a crispy exterior. The ribs are finished with a spicy dry spice mix or a fresh chili soy dip, delivering crunchy, flavorful bites with a garlicky depth.

Description

This recipe starts with soaking and marinating ribs to remove blood and infuse flavor with chopped garlic, ginger slices, light and dark soy sauce, oyster sauce, salt, and white pepper. The ribs are then coated with starch before frying to develop a light crispness.

The ribs undergo two frying stages: initial slow frying at 140-150°C until lightly browned and then a quick high-temperature fry at 200°C to crisp the surface and finish cooking. This double-fry technique ensures the ribs are juicy on the inside with a crackly crust.

The dish is served hot, optionally accompanied by a dry spice dip made from salt, chili flakes, and ground cumin, or a spicy chili soy dipping sauce with sesame oil, black vinegar, garlic, and green onion. These contrasting dips offer layered flavors to the savory ribs.

Ingredients

Servings
  • 500 g ribs ,select ribs from younger pigs
  • 1/4 cup starch about 1/3 cup
  • oil for deep-frying

Marinating

  • 6-8 garlic roughly chopped, cloves
  • 3-4 lices ginger
  • 1 tbsp. soy sauce light
  • 1/2 tsp. dark soy sauce
  • 1 tbsp. oyster sauce
  • 1 tsp. salt
  • 1/4 tsp white pepper

Dry spice mixture dip

  • 1 tsp. salt
  • 1 tbsp. chili pepper flakes
  • 1 tbsp. cumin ground

Spicy dip

  • 1 Thai Chili pepper cut into small circles
  • 1 tbsp. soy sauce light
  • 1 tbsp. sesame oil
  • ½ tbsp. black vinegar
  • 1 tsp. garlic chopped
  • 1 tsp. green onion chopped

Instructions

  1. Roughly chop the garlic and rinse under running water. Drain and set aside.
  2. Soak the ribs in clean water for half an hour to remove the blood water.
  3. Pat dry with kitchen paper and add all the other marinating at least 4 hours or or overnight in fridge.
  4. Before frying, add starch and mix well.
  5. Heat oil until 140 to 150 degree C and slow down the fire. Fry the ribs until slightly browned (may takes 6-10 minutes). Stir from time to time during the process. Transfer out.
  6. Heat the oil until almost smoky (until 200 degree C), place the ribs in and fry for another 20 to 30 seconds. Keep stirring in the second deep-frying process to avoid burnt garlic.
  7. Serve hot!
