Fried Ice Cream Cake
Description
Fried Ice Cream Cake features softened vanilla ice cream spread between two layers of a sweet cornflake mixture. The crust is made by simmering butter and sugar, then stirring in crushed cornflakes and cinnamon, which are pressed into a baking dish both below and above the ice cream layer. After assembling, the cake is frozen to set overnight or for several hours. The baked cornflake crust adds a crunchy texture with a warm spice note from cinnamon, contrasting the cold, smooth ice cream interior.
This dessert can be cut into squares and served topped with whipped cream, cinnamon-sugar mixes, maraschino cherries, or sauces such as hot fudge, caramel, or honey, adding customizable flavors and enhancing richness. The structure holds well frozen, so it can be prepared ahead of time for gatherings or family meals.
The method requires gentle handling of the softened ice cream to spread it evenly within the crunchy crust layers and enough freezing time for the cake to firm up before slicing. Optional toppings provide flexibility to suit different tastes or occasions.
Ingredients
- ½ gallon vanilla ice cream (softened)
- ½ cup butter
- ¾ cup sugar
- 3 cups corn flakes crushed
- 1 teaspoon cinnamon
Optional Toppings:
- Whipped Cream

- Spoon softened ice cream over the top and carefully smooth over with a spatula or knife. Then, evenly sprinkle the remaining mixture over the top of the ice cream.
- Cover and freeze for 6+ hours or overnight. Cut into serving-sized squares and top with desired toppings.
