Description
Frito Pie combines browned ground beef cooked with diced onions, taco seasoning, chili powder, and tomato-based sauces, simmered with corn and kidney beans to build a rich filling. Corn chips are layered on the bottom of a casserole dish with some cheese, topped with the beef mixture, then more cheese before baking until melted and bubbling. Finally, additional corn chips and optional sour cream garnish complete the dish.
The baked blend of meat, beans, and spices paired with crunchy corn chips creates a satisfying texture contrast. It makes a filling main course ideal for informal meals. The recipe also suggests alternatives like turkey or chicken for the beef and adding jalapeños for extra heat.
For best texture, it’s recommended to add the final corn chip topping just before serving, especially when reheating leftovers. The dish adapts well to variations in protein and spice level according to preference.
Ingredients
- 1 pound ground beef lean
- 1 yellow onion finely diced
- 1 packet taco seasoning or 3 tablespoons homemade taco seasoning
- ½ cup water
- 1 tablespoon chili powder
- 1 (10 ounce each) can diced tomatoes with chilies such as Rotel, or salsa
- 1 ½ cups tomato sauce
- 1 cup corn kernels thawed, frozen
- 1 (15 ounce each) can red kidney beans drained and rinsed
- 1 (9.25 ounce each) bag corn chips divided, Fritos®
- 2 cups Mexican cheese blend divided, shredded
- sour cream for serving, optional
Instructions
- Preheat oven to 350°F. Grease a 9 x13-inch casserole dish.
- Brown ground beef and onions, drain fat. Stir in taco seasoning, chili powder, and water.
- Bring to a boil, reduce heat and simmer until thickened. Stir in diced tomatoes, tomato sauce, corn, & beans. Simmer an additional 5 minutes.
- Add 4 cups of corn chips to the bottom of the prepared dish. Sprinkle with 1 cup of cheese.
- Spread beef mixture over top and top with remaining cheese.
- Bake 18 to 20 minutes or until cheese is melted.
- Top with remaining chips and desired toppings.
Notes
- Ground beef can be substituted with ground turkey or chicken as desired.
- For leftovers, add corn chips and toppings after reheating to maintain crunch.
- Increase spiciness by including diced jalapeños in the meat mixture.
