Frog Eye Salad combines tiny acini di pepe pasta with a sweet, creamy pineapple-based dressing enriched by eggs and flour for thickness. The salad is mixed with mandarin oranges, crushed pineapple, Cool Whip, and miniature marshmallows for a light, fruity dessert salad. This chilled dish offers a unique texture pairing of small pasta with soft fruit and whipped topping.

Description

Frog Eye Salad uses acini di pepe pasta cooked just shy of package directions to maintain slight firmness before being rinsed and mixed with a thickened dressing of pineapple juice, sugar, eggs, flour, and salt. Lemon juice is stirred in to add brightness once the mixture is removed from heat.

After chilling the pasta and dressing, fruit components—mandarin oranges and crushed pineapple—are folded in with Cool Whip and miniature marshmallows. This produces a sweet, creamy salad with contrasting textures: chewy pasta pearls alongside soft fruits and airy topping.

The salad is served cold, making it a refreshing side or dessert option at gatherings. The subtle tartness in the dressing balances the sweetness from the fruit and marshmallows.

Ingredients

  • 1 cup white sugar
  • 2 tablespoons flour
  • 2 teaspoons salt
  • 1 3/4 cups pineapple juice unsweetened
  • 2 egg beaten
  • 1 tablespoon lemon juice
  • 1 pound Acini di pepe pasta
  • 2 cups mandarin oranges drained well, canned
  • 20 ounces pineapple drained well, crushed
  • 8 ounces Cool Whip
  • 1 cup miniature marshmallows

Instructions

  1. In a large pot whisk together the sugar, flour, salt, pineapple juice and eggs on medium heat until thickened then turn off the heat and whisk in the lemon juice.
  2. Cook the acini de pepe pasta one minute shy of the directions then drain and rinse well before adding to the pineapple egg mixture and mixing it together.
  3. Refrigerate the pasta mixture until fully chilled and just before serving mix with the oranges, pineapple, cool whip and marshmallows.

Notes

  • Use kitchen timers for each cooking step to ensure proper timing and texture.
