Frosted Sugar Cookie Bars

Frosted Sugar Cookie Bars combine a thick, tender bar cookie base with a creamy vanilla frosting topped with colorful sprinkles. The dough blends butter and cream cheese for a moist texture, and the baking powder and soda help achieve a light crumb. After baking, the bars are cooled completely before spreading the rich frosting evenly across the surface. These bars make a festive treat with a soft bite and a sweet, smooth finish from the vanilla frosting, perfect for serving at gatherings or as a dessert snack.

Description

Frosted Sugar Cookie Bars start with a dough made of all-purpose flour, baking powder, baking soda, salt, butter, cream cheese, sugar, egg, and vanilla extract. The cream cheese mixed with butter in the dough provides a moist and tender crumb. The dough is spread thickly in a 9x13-inch pan and baked until lightly golden, ensuring a soft yet firm cookie base. After cooling, the frosting is made by creaming butter and powdered sugar with vanilla, then spread on top. Rainbow sprinkles add decoration and a slight crunch. This recipe yields bars that balance softness and sweetness, with a smooth vanilla frosting that enhances the cookie flavor. They can be sliced into bars for serving, ideal for celebrations or casual treats.

Ingredients

Servings

For the Cookie Bars

  • cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • ¾ cup butter at room temperature, unsalted
  • 4 ounces cream cheese at room temperature
  • cups granulated sugar
  • 1 egg
  • 2 teaspoons vanilla extract

For the Frosting

  • 1 cup butter at room temperature, unsalted
  • cups powdered sugar
  • 1 tablespoon vanilla extract
  • Rainbow sprinkles for decorating

Instructions

  1. Make the Cookie Bars: Preheat oven to 350 degrees F. Grease a 9x13-inch baking pan or line with parchment paper; set aside.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt; set aside.
  3. Using an electric mixer, cream together the butter and cream cheese on medium speed until smooth, about 1 minute. Add the sugar and continue to beat until light and fluffy, about 3 minutes. Add the egg and vanilla extract and beat to combine, about 1 minute. Reduce the mixer speed to low and gradually add the flour mixture, mixing only until barely combined. Use a rubber spatula to finish mixing, ensuring there are no pockets of flour remaining.
  4. Using a spatula, spread the dough into an even layer in the prepared pan (the dough will be thick!). Bake until light golden brown and a toothpick inserted in the center comes out clean, 20 to 25 minutes. Place the pan on a wire rack to cool completely before frosting.
  5. Make the Vanilla Frosting: Using the wire whisk attachment of your stand mixer, whip the butter on medium-high speed for 5 minutes, stopping to scrape the bowl once or twice. Reduce the speed to low and gradually add the powdered sugar. Once all of the powdered sugar is incorporated, increase the speed to medium-high and add the vanilla, mixing until incorporated. Whip at medium-high speed until light and fluffy, about 2 minutes, scraping the bowl as needed.
  6. Spread the frosting over the cookie bars and decorate with sprinkles, if desired. Cut the bars into squares and serve. The cookie bars should be kept in an airtight container at room temperature for up to 3 days (you can store them in the refrigerator for up to 1 week).

Notes

  • Allow the cookie bars to cool completely before frosting to prevent melting and sliding of the frosting layer.
  • Use room temperature butter and cream cheese for smoother dough and frosting texture.
  • Store bars in an airtight container to maintain freshness for several days.
