The mixture is heated over medium-low heat, brought to a brief boil while stirring to prevent scorching, then simmered to thicken. As it cools, the compote thickens further, forming a syrupy fruit sauce with a balance of sweetness and berry flavor enhanced by vanilla.
This versatile compote can be served warm or cooled, complementing dishes like pancakes, waffles, yogurt, ice cream, or even as a sauce for cakes and pastries. Its texture is soft but still with discernible fruit pieces.
Stored in a sterilised jar in the refrigerator, it keeps for up to five days, or can be frozen for extended storage up to two months, making it easy to prepare in advance and use as needed.
Ingredients
- 2 cups mixed berries frozen (200g)
- 2 tablespoons sugar
- 2 tablespoons water
- ½ teaspoon vanilla extract
Instructions
- Add all ingredients to a saucepan over a medium/low heat and stir well. Allow it to boil for about 5 minutes, stirring often to stop it from scorching.
- Reduce the heat to low and let it simmer and bubble for 10 minutes. It will thicken further as it cools.
- Serve warm or allow to cool and store in a sterilised jar in the fridge for up to 5 days (or freeze for up to 2 months).
