Frozen Chocolate Peanut Butter Pie

Frozen Chocolate Peanut Butter Pie is an easy no bake dessert with three layers... cookie crust, peanut butter cheesecake and creamy chocolate gelato (with peanut butter cups stuffed inside!).

Crust:

  • 30 chocolate sandwich cookies
  • 3 tablespoons butter melted

Peanut Butter Cheesecake:

  • 8 ounces cream cheese softened
  • 3/4 cup peanut butter creamy
  • 1 cup powdered sugar
  • 8 ounces whipped topping
  • 3 cups Peanut Butter Cup Candies divided, chopped
  • 32 ounces Chocolate gelato softened slightly, HemisFares brand, 2 tubs

Instructions

  1. Using a food processor, crush the cookies until they are in fine crumbs.
  2. Pour the crumbs in a bowl and add the melted butter. Mix well.
  3. Spray the bottom of a 10" springform pan with cooking spray.
  4. Press the cookie crumbs firmly in the bottom of the prepared pan.
  5. In a large bowl, cream together the cream cheese and peanut butter using a hand mixer.
  6. Add in the powdered sugar and mix well.
  7. Add the whipped topping and fold together using a rubber spatula until it is completely mixed in.
  8. Spread the peanut butter mixture over the cookie crust.
  9. Sprinkle 1 1/2 cups of chopped candies overtop the peanut butter mixture.
  10. Spread the softened chocolate gelato over the candies, making an even layer.
  11. Sprinkle the remaining candies over the gelato and press them down gently into the gelato.
  12. Cover the pie with plastic wrap and freeze for at least 4-5 hours, or until it is firm.
  13. Remove the pie from the freezer 10-2o minutes before serving so it is easier to slice.
  14. Serve with whipped cream, if desired.

Notes

  • If the frozen pie is hard to cut, run a sharp knife under hot water right before slicing so the knife melts the layers and makes it easier to cut.
