Frozen Chocolate Raspberries (Tru Fru Copycat!)

Frozen Chocolate Raspberries are fresh or frozen raspberries coated separately in white and dark chocolate, creating a layered frozen treat. Dipping the frozen berries in melted chocolate mixed with coconut oil produces a firm, glossy coating that hardens quickly in the freezer. This snack combines the tartness of raspberries with smooth, sweet chocolate for contrasting textures and flavors.

Description

The preparation starts by freezing raspberries in a single layer to ensure they hold their shape and allow easy dipping. White chocolate chips combined with coconut oil are melted gently to a creamy consistency, and each frozen raspberry is dipped using a fork before transferring to parchment paper. The process is then repeated with dark chocolate and remaining coconut oil for a second coating. The chocolates firm up quickly when returned to the freezer.

This method results in raspberry confections with a crisp chocolate shell enclosing the cold fruit inside, offering a refreshing and sweet snack or dessert. The use of coconut oil helps the chocolate set more smoothly and maintains a shiny appearance. The two types of chocolate provide variety in flavor as well as color contrast.

Storing the finished berries in airtight containers in the freezer preserves their texture and taste for up to two months. Substitutions for fully frozen raspberries are possible, and a vegan version can be made using plant-based chocolates for those dietary needs.

Ingredients

Servings
  • 2 cups raspberry fresh or frozen
  • 1 cup white chocolate chips or chunks
  • 2 tsp coconut oil divided
  • 1 cup dark chocolate chips or chunks

Instructions

  1. Freeze Berries: Freeze berries in a single layer. This makes dipping easier and will help the chocolate firm up more quickly!
  2. White Chocolate: Add white chocolate and 1 tsp of the coconut oil to a microwave-safe bowl. Microwave in 20 second bursts, stirring between rounds, until most of the chocolate is melted. Stir to melt the remaining chunks. Dip each raspberry into the white chocolate using a fork, transferring each to a parchment-lined plate when finished.
  3. Dark Chocolate: Add dark chocolate and the remaining 1 tsp of the coconut oil to a microwave-safe bowl. Repeat step 2, dipping the berries in the dark chocolate this time.
  4. Freeze: Transfer finished berries to the freezer until ready to enjoy!

Notes

  • Store frozen chocolate raspberries in an airtight container in the freezer for up to 2 months.
  • Use whole frozen raspberries if available to save preparation time.
  • For a vegan version, substitute with vegan white and dark chocolate chips.
