Frozen Cottage Cheese Ice Cream Bars

These Frozen Cottage Cheese Ice Cream Bars offer a creamy, smooth texture achieved by blending cottage cheese with fruits like strawberries or pineapple and add-ins such as graham crackers or chocolate chips. The mixture is poured into molds and frozen, creating a refreshing frozen treat with a balance of tartness, sweetness, and subtle creaminess from the cottage cheese. Varieties include Strawberry Cheesecake, Banoffee Pie, Pineapple Coconut, and Mixed Berry Breakfast, each with unique flavor combinations and textures.

Description

Frozen Cottage Cheese Ice Cream Bars are a set of frozen pops made from blended cottage cheese combined with fruit, natural sweeteners like pure maple syrup, and flavorings such as vanilla extract. The recipe provides versions like Strawberry Cheesecake with crushed graham crackers, Banoffee Pie with caramel and chocolate chips, Pineapple Coconut with coconut flakes, and Mixed Berry with granola. The cottage cheese base is blended thoroughly to reduce graininess and achieve a smooth, velvety texture.

Once blended, the mixture is transferred to popsicle molds, sticks are inserted, and the bars are frozen for at least 8 hours until solid. Removing the bars may require briefly running the mold under warm water. The flavors range from fruity and sweet to creamy with crunchy elements, offering a variety of textures and tastes.

These bars can be served as a frozen dessert or snack and are suitable for making ahead since they keep well frozen for up to 2 months. The recipe notes suggest tasting and adjusting sweetness before freezing to match preferences or accommodate variations in cottage cheese brand or fruit ripeness.

For those without popsicle molds, filling small paper cups and covering with foil, then inserting a stick through the foil is an alternative freezing method. Proper blending of cottage cheese is emphasized to ensure a smooth final texture.

  • 1 cup cottage cheese
  • ½ cup milk
  • 3 tablespoons pure maple syrup
  • 1 teaspoon vanilla extract
  • 2 graham cracker sheets crushed

Banoffee Pie

  • 2 banana
  • 1 cup cottage cheese
  • ½ cup milk
  • 2 tablespoons pure maple syrup
  • 1 tablespoon salted caramel or regular caramel
  • 1 teaspoon vanilla extract
  • ¼ cup mini chocolate chips

Pineapple Coconut

  • 2 cups pineapple frozen chunks
  • 1 cup cottage cheese
  • ½ cup coconut water
  • 3 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • ¼ cup coconut flakes unsweetened

Mixed Berry Breakfast Pops

  • 1 ounce bag mixed berries frozen
  • 1 cup cottage cheese
  • ½ cup milk
  • 3 tablespoons pure maple syrup
  • 1 teaspoon vanilla extract
  • ½ cup granola

Instructions

  1. Add all ingredients except the last ingredient from any of the flavors to a high-speed blender and process for 1 to 2 minutes, or until completely smooth. Stir the last ingredient into the blender using a spoon.
  2. Transfer the mixture to a popsicle mold, then add wooden sticks, or the sticks that come with your mold.
  3. Set in the freezer for at least 8 hours, then remove from mold. If you are having a hard time getting the pops out, you can run the mold under warm water for a few moments to help loosen them.

Notes

  • Freeze the ice cream bars in popsicle molds for up to 2 months to maintain quality and prevent freezer burn.
  • Blend the cottage cheese thoroughly until velvety smooth to avoid undesirable graininess.
  • If you don't have popsicle molds, fill small paper cups three-quarters full, cover with foil, poke a stick through the foil, and freeze until solid.
  • Taste the mixture before freezing to adjust sweetness based on the cottage cheese brand and fruit ripeness.
  • To remove bars easily, run the bottom of the mold briefly under warm water to loosen the ice cream bars.
