Description
Frozen Cranberry Bars start with a crust made from graham cracker crumbs blended with melted butter, pressed firmly into a pan. The filling blends softened cream cheese with sweetened condensed milk until smooth, then incorporates small chopped fresh cranberries and raspberry-flavored gelatin powder. Once combined, this mixture is spread evenly on the prepared crust.
Chilling in the freezer for one to two hours allows the bars to firm up and set, creating a dessert with a creamy texture and a bright, tart cranberry flavor balanced by the sweetness of the condensed milk and gelatin. The graham cracker crust adds a buttery, slightly crunchy base.
The bars are best served frozen and can be cut into 16 squares. They are suitable as a refreshing dessert or snack, especially for occasions needing make-ahead desserts.
Line the pan with parchment paper for easier removal and consider dipping the pan base briefly in warm water to loosen frozen bars. Store bars in an airtight container in the freezer for up to three months.
Ingredients
Crust
- 1 ¼ cups graham cracker crumbs
- ¼ cup butter melted
Cranberry Mixture
- 8 ounces cream cheese softened
- 14 ounces sweetened condensed milk
- 12 ounces cranberries fresh
- 3 ounces raspberry gelatin dessert
Instructions
Crust
- Melt butter and mix with the graham cracker crumbs until combined.
- Press the mixture into a 9x9 pan and set aside.
Cranberry Mixture
- Place cream cheese in a food processor and blend until smooth. Add sweetened condensed milk and pulse until combined.
- Pour mixture into a large bowl and set aside. Add cranberries to the food processor and pulse until they form small pieces.
- Combine cranberries with cream cheese mixture & jello in the bowl and mix until fully incorporated.
- Pour into the prepared pan and freeze until firm (about 1-2 hours).
- Once frozen remove from the freezer and cut into 16 squares.
Notes
- Line the pan with parchment paper to ease removal of frozen bars.
- To remove bars easily, dip the bottom edge of the pan in warm water to loosen the crust.
- If cranberry gelatin is unavailable, raspberry or any red-colored gelatin can be used instead.
- Serve bars frozen, removing from freezer 10 minutes before serving to soften slightly.
- Store bars in an airtight container in the freezer for up to 3 months.
