Frozen Paleo Chocolate Covered Bananas

This recipe creates frozen banana sandwiches filled with almond butter and covered in melted chocolate, then frozen until firm. The bananas provide a creamy, naturally sweet base, while the almond butter adds rich nuttiness and a smooth texture inside each sandwich. The chocolate coating hardens to a crisp shell, resulting in a cool, satisfying snack that balances fruity freshness with chocolatey richness.

Description

Frozen Paleo Chocolate Covered Bananas combine sliced bananas layered with an almond butter and vanilla mixture, formed into small sandwich bites. Each banana sandwich is dipped in melted chocolate mixed with coconut oil for a smooth, glossy coating. Freezing both before and after dipping ensures the treats stay solid, making them a convenient frozen snack. The recipe highlights ripe but not overly soft bananas for optimal texture and ease of spreading the almond butter mixture.

The almond butter filling introduces creaminess and a subtle nutty depth, while the dairy-free chocolate coating provides a crisp contrast to the smooth banana. Coconut oil in the chocolate helps achieve a shiny finish and smooth dipping consistency. The bites offer a balance of sweetness and healthy fats, suitable for a paleo-friendly frozen treat.

These frozen banana bites can be served directly from the freezer as a refreshing snack or dessert. Storing them properly frozen prevents melting and chocolate mess. The recipe yields approximately twenty-three pieces, making it suitable for sharing or portioned snacks over time.

Using fresh nut butter ensures easy spreading, especially if bananas are quite ripe; alternatively, freezing bananas first can help with spreading consistency. To maintain the paleo quality, dairy-free chocolate chips are recommended. After freezing, store the banana bites in a freezer-safe container to avoid damage to the chocolate coating.

Ingredients

Servings
  • 3 banana
  • cup almond butter
  • ½ teaspoon vanilla
  • 1 tbs coconut oil
  • ¾ cups chocolate chips mini

Instructions

  1. Slice your bananas and place half of them on a tray lined with parchment paper.
  2. In a small bowl, whisk together the vanilla and almond butter.
  3. Portion out the almond butter mixture onto the bananas and top each one with another banana to make a “sandwich”.
  4. Place in the freezer for a moment.
  5. In a small pot, heat the coconut oil and chocolate chips at low temperatures. Once mostly melted, remove from heat and stir to combine.
  6. Carefully, dip the banana sandwiches one at a time into the melted chocolate and place them back on the parchment paper.
  7. Freeze for thirty minutes or until you’re ready to enjoy it!
  8. Makes 23 banana bites (roughly)

Notes

  • Fresh nut butter spreads more easily when bananas are not overly ripe; freezing bananas before slicing can help if bananas are too soft.
  • Use dairy-free chocolate chips to keep this recipe paleo, such as enjoy-life brand.
  • Store the finished banana bites fully frozen in a container or bag to preserve the chocolate coating and prevent melting.
  • Any nut or seed butter can be substituted for almond butter; sunflower seed butter works well for a nut-free version.
  • Ripe bananas add natural sweetness but avoid overly mushy ones for easier handling.
