Frozen Peach Cobbler

Frozen Peach Cobbler combines sweetened, spiced frozen peaches with a thick, dropped biscuit-style topping baked until golden. The filling uses flour to thicken the peach juices, while the topping is rich with butter and eggs, providing a tender, cake-like crust. This cobbler is a good option to use frozen peaches, and the cinnamon adds warmth and aroma to the dessert. It's baked uncovered until the topping is set and lightly browned, producing a contrast of juicy fruit and a soft, structured crust.

Description

Frozen Peach Cobbler is made by tossing frozen sliced peaches with sugar, flour to thicken, cinnamon, and salt, then spreading the mixture into a prepared pan and drizzling with melted butter. The topping is created by mixing flour, sugar, cinnamon, baking powder, and salt, then cutting in butter until crumbly before adding beaten eggs. Spoonfuls of this thick topping are dropped over the peach filling to form an uneven crust. Baking at 350°F for nearly an hour allows the filling to bubble and the topping to bake through and brown selectively. The result is a comforting cobbler with a balance of tart and sweet cooked peaches under a tender, cakey topping. Its use of frozen fruit makes it convenient year-round and a good way to enjoy peaches out of season.

The texture contrasts between the juicy, spiced peaches and the soft but structured topping give a classic cobbler feel. Cinnamon adds a warm spice note throughout. Because the topping is dropped rather than spread, it creates an informal rustic surface that crisps in spots while remaining soft inside. This cobbler works well as a warm dessert served solo or with ice cream.

Ingredients

Servings

For filling:

  • 9 cups peach frozen, sliced
  • ½ cup granulated sugar
  • ½ cup all-purpose flour
  • ½ teaspoon cinnamon
  • ¼ teaspoon kosher salt
  • 4 tablespoons butter melted, unsalted

For topping:

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1-1/2 teaspoon baking powder
  • ½ teaspoon cinnamon
  • ½ teaspoon kosher salt
  • 4 tablespoons butter room temperature, unsalted
  • 2 large egg beaten

Instructions

  1. Preheat oven to 350 degrees F and spray a 9x13 inch pan with nonstick spray.

For filling:

  1. Add the peaches to a large mixing bowl.
  2. In a small mixing bowl combine sugar, flour, cinnamon, and salt.
  3. Pour the dry mixture over the peaches and toss.
  4. Add peaches to the prepared pan. Sprinkle any dry mixture left in the bowl on top of the peaches in the pan.
  5. Drizzle the top with melted butter.

For Topping:

  1. Combine the flour, sugar, cinnamon, baking powder, and salt in a small mixing bowl.
  2. Cut in the butter until the mixture looks like coarse cornmeal.
  3. Add beaten eggs and mix.
  4. Drop spoonfuls of the topping onto the peach mixture. The topping will be thick so it's best to do it in little drops and try to spread out as best you can.
  5. Bake uncovered for 50-60 minutes.
