Frozen Strawberry Rhubarb Margaritas
Description
Frozen Strawberry Rhubarb Margaritas feature a house-made rhubarb simple syrup created by simmering diced rhubarb with sugar and water until the rhubarb breaks down and the syrup thickens. This syrup is then chilled and combined in a blender with frozen strawberries, tequila, and triple sec. The mixture is blended until smooth, producing a slushy texture with bright, fruity flavors and a delicate tartness from the rhubarb. The cocktail glasses can be rimmed with sugar by rubbing them with a lime or lemon wedge before pouring the margarita blend.
This cocktail works well served in large margarita glasses for sharing or in smaller stemmed glasses for individual servings. It’s a refreshing choice for warm weather or special gatherings where a fruity, frozen drink is appreciated.
The rhubarb simple syrup can be made ahead to reduce preparation time. Leftover syrup can be stored in the refrigerator. Using frozen strawberries allows for a chilled, slushy texture without adding ice that would dilute the drink. Rolling the glass rim in sugar is optional but adds extra sweetness and a decorative touch.
Ingredients
Rhubarb Simple Syrup:* (See Recipe Notes)
- 1 rhubarb stalk, diced
- 1 cup sugar
- 1 cup water
Frozen Strawberry Rhubarb Margaritas:
- 2 ounces rhubarb simple syrup
- 2 cups strawberry frozen
- 5 ounces tequila
- 2 ounces triple sec
- lime or lemon wedge, sugar for serving
Instructions
Rhubarb Simple Syrup:
- Add rhubarb and sugar to a small pot, and fill pot with just enough water to cover the rhubarb. Bring to a boil, then lower heat to medium. Cover, and simmer until the rhubarb stalks begin to fall apart.
- Strain sugar-water off of the rhubarb into a container, reserving rhubarb for another recipe if desired. Allow rhubarb syrup to cool to room temperature. (If desired, put syrup in the fridge to speed cooling process.)
Frozen Strawberry Rhubarb Margaritas:
- Add all margarita ingredients to a blender and blend until smooth.
- Optionally, rub the rim of your cocktail glasses with a lemon or lime wedge. Roll the edge of the glass in sugar to coat.
- Pour frozen cocktail mixture in 2 large margarita glasses or 4 smaller stemmed cocktail glasses.
Notes
- This recipe yields four small or two large margaritas; double the ingredients for a larger batch or pitcher.
- Prepare the rhubarb simple syrup in advance to reduce overall recipe time to approximately five minutes when ready to blend.
- Reserve the cooked rhubarb solids from syrup making for use in other recipes to avoid waste.
