Frozen Yogurt Bars

Frozen Yogurt Bars are super easy to make and no popsicle mold needed. A refreshing and healthy sweet treat for both kids and adults with deliciously sweet berries. Dairy free friendly and a great way to get your kids in the kitchen! Using Greek yogurt or Skyr for a high protein snack.

Frozen Yogurt Bars

  • 2 strawberries sliced
  • 4 raspberry sliced in half
  • 4 blackberry sliced in half
  • 10 blueberries
  • 1 cup Greek yogurt 2% fat or higher for best flavor, or skyr
  • 3 tablespoons honey raw
  • 1 tablespoon cashew butter or nut or seed butter of choice
  • ½ teaspoon vanilla bean powder or 1 teaspoon vanilla extract

Optional Mix-In's

  • 3 tablespoons protein powder

Optional Chocolate Drizzle

  • 2 tablespoons chocolate chips
  • 1 teaspoon coconut oil

Instructions

  1. Prepare fruit and set aside on cutting board.
  2. Line a medium baking sheet with parchment paper; set aside. 
  3. In a medium bowl, combine Greek yogurt or Skyr with raw honey, cashew butter and vanilla powder. Stir until well combined.
  4. Scoop about 3 tablespoons of the mixture onto the lined baking sheet (I use a medium cookie scoop) and gently place berries on top of yogurt, mixing berries as desired.
  5. Freeze: Place popsicle sticks into yogurt and transfer sheet to freezer. Freeze for at least 4 hours. 
  6. Optional chocolate drizzle: While the yogurt bars are still in the freezer, melt chocolate chips and coconut oil in a microwave-safe bowl in 30 second increments, stirring between each time. Once fully melted, remove the tray from the freezer and drizzle on chocolate. If you’d like to cover the bar completely with chocolate, double the chocolate drizzle and spoon the melted chocolate over entire bar. The chocolate will set in a few minutes and they are ready to eat.

Notes

  • STORAGE - frozen yogurt bars can be stored on the same parchment paper lined baking sheet, tightly covered with foil. Or, transfer the popsicles to a freezer-safe plastic bag or airtight container. Freeze for 2-3 months.
  • BABY LED WEANING TIP: This recipe could easily work for your little one and would make a great teething snack. Honey should not be given to infants (babies under 1 year old) so feel free to just omit the honey here, skip the chocolate and serve berries on the side.
