Description
Frozen Yogurt Granola Bars feature a no-bake granola layer pressed firmly into a dish, made from rolled oats, nut butter, maple syrup, vanilla, cinnamon, and salt. This sturdy base is topped with vanilla-flavored yogurt spread across evenly, then decorated with sliced strawberries, blueberries, raspberries, and blackberries. After freezing for a few hours, the yogurt sets firm, allowing the mixture to be cut into bars that blend chewy and creamy textures. These bars can be enjoyed cold and make refreshing snack bars especially suitable for warmer weather.
The berries add bursts of freshness and slight tartness to the sweet, cinnamon-spiced granola. By using different flavored yogurts or nut butters such as tahini or sun butter, the bars can be tailored to dietary needs or flavor preferences. Ingredients
No-Bake Granola Base:
- 1 ½ cups rolled oats gluten-free if needed
- ⅓ cup nut butter almond butter or peanut butter
- 3 tablespoon maple syrup or honey
- 1 teaspoon vanilla extract pure
- 1 teaspoon cinnamon
- ½ teaspoon salt
Yogurt Fruit Layer:
- 2 cups vanilla yogurt I love Siggi's Vanilla Skyr, or skyr
- ⅓ cup strawberry sliced, fresh
- ¼ cup blueberries fresh
- ¼ cup raspberry cut in half (optional berry
- ¼ cup blackberry cut in half (optional berry
Instructions
- Line an 8x8” or 9x9” baking dish with parchment paper and set it to the side.
- Make the Granola Base: In a large mixing bowl, combine all the granola ingredients and mix with a spatula. Then, add the oat mixture to the lined baking dish and use a spatula to firmly press and spread it in an even layer across the bottom of the dish. It’s important to “pack” the granola base.
- Assemble: Add the vanilla yogurt or skyr to the top and spread across the granola base in an even layer. Top with the strawberries, blueberries, raspberries and/or blackberries.
- Freeze: Place in the freezer for at least 2 hours to set, or until the yogurt is solid. Remove from the freezer and cut into squares. Enjoy cold and store leftovers in the freezer.
Notes
- You can substitute rolled oats with quick oats but not steel-cut oats for the granola base.
- Try different yogurt flavors like strawberry or peach to vary the taste.
- Sun butter or tahini are excellent nut-free alternatives to almond or peanut butter.
- For a vegan option, use dairy-free yogurts such as coconut or almond milk varieties.
- To double the recipe, use a larger 9" x 13" baking dish.
- Store leftover bars in a freezer-safe container to keep them fresh and firm.
