This honey mustard tuna salad is full of bold and tangy flavors. It's packed with protein and perfect for lunch on-the-go. Enjoy this flavorful recipe on a half piece of toast, stuffed in a sandwich, in a lettuce wrap, with crackers or eat straight up!

Ingredients
Tuna salad:
- 2 5-oz. cans tuna drained, feel free to use shredded chicken instead
- 1 small pink lady apple (90g) chopped small, with all the bold and tangy flavors going on I think a sweet pink lady apple tastes best with this but any apple variety works!
- 2 pieces bacon (22g) cooked & crumbled
- 2 Tbsp dried cranberries (20g) can also use dried cherries
- 2 Tbsp green onion sliced thin, can sub for red onion (finely diced)
Honey mustard:
- 2 Tbsp plain Greek yogurt (30g) can also use all mayo if preferred
- 2 Tbsp light mayo (30g) can use all Greek yogurt if preferred
- 2 tsp honey (14g)
- 2 tsp yellow mustard (10g) dijon also works
- 2 tsp fresh lemon juice (10g)
- salt & fresh cracked black pepper a pinch or to taste

Instructions
- Combine the honey mustard ingredients in a large bowl.
- Add the tuna, apples, bacon, dried cranberries and sliced green onions. Mix everything well. Season with a pinch of salt and pepper or to taste.
- Enjoy on a half piece of toast, stuffed in a sandwich, in a lettuce wrap, with crackers or eat straight up!
Notes
- Prep tips:
- Cook bacon in advance - to have cooked and crumbled when ready!
- Drain tuna in advance - use a paper towel to remove excess moisture. We want the tuna completely drained so the tuna salad isn’t liquidy.
- Prepare honey mustard - go ahead and mix together the ingredients for the honey mustard. You can also just skip making the honey mustard sub for your favorite
