  • 1/2 cup candied cherries red
  • 1/2 cup candied cherries green
  • 1 1/2 cups pineapple diced, candied
  • 1/2 pound walnuts , halved
  • 1 cup golden raisins
  • 1/2 cup shortening
  • 1/2 cup sugar
  • 3 large egg
  • 2 tablespoons vanilla extract
  • 1 1/2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons cinnamon
  • 3/4 teaspoons nutmeg
  • 1/2 teaspoon allspice
  • 1/4 teaspoon cardamom

Instructions

  1. Preheat oven to 300° and grease a 9x5 loaf pan.
  2. Add your shortening and sugar to a stand mixer on medium speed for 1-2 minutes until light and fluffy.
  3. Add in the eggs one at a time, then add in the vanilla.
  4. Add in the flour, baking powder, salt, and spices until just combined then fold in the chopped dried fruit and walnuts.
  5. Pour the mixture into your loaf pan.
  6. Bake for about 90 minutes.
  7. Cool for 10 minutes then remove from your loaf pan carefully and allow to cool completely before slicing or wrapping as a gift.
